How long to smoke a 8 lb brisket
A 8 lb brisket takes about 7.5 to 9.5 hours at 250°F. Pull it at 195 to 205°F, then rest 1 to 2 hours.
Time is a range because every smoker, cut and day is different. Use the thermometer, not the clock, to decide when it is done.

If the meat finishes early, wrap it in foil and a towel and hold it in a cooler, keeping it above 140°F, rather than letting it sit out.

Tip for a 8 lb brisket
Expect a stall somewhere around 150 to 170°F, when the temperature barely moves for an hour or more. Wrapping in butcher paper or foil, or simply waiting, gets you through it (see the stall guide).
