How long to smoke Baby back ribs
At 250°F, plan on 3.5 to 4.5 hours in total, whatever the weight. Pull it at 195 to 203°F.
Baby backs are leaner and smaller than spares, so they finish about an hour sooner.

Tips for baby back ribs
- Remove the membrane on the bone side before seasoning, so smoke and rub reach the meat and the ribs are not chewy.
- Use the bend test: when you pick the rack up by one end with tongs, it should bow and the surface should crack.
- A 2-2-1 schedule (smoke, wrap, glaze) is a common plan at 225°F for baby backs.
